Sourdough Cinnamon Rolls

Dough

½ Cup (113g) Sourdough starter (bubbly)

½ Cup (118g) Water

4 Cups (560g) Flour

½ Cup Melted Butter

½ Cup(168g) Honey

2 eggs

1.2 teaspoon salt (optional)

Filling

½ Cup softened butter

1 Cup brown sugar

3 Tablespoons cinnamon

To Make Filling:

Mix softened butter, brown sugar, and cinnamon together in a bowl. Spread on dough.

Cream Cheese Topping

8 oz cream cheese

½ Cup milk or heavy cream

½ Cup honey

2 teaspoons vanilla extract

To Make Cream Cheese Topping:

Mix cream cheese, honey, and vanilla until smooth. Slowly add milk or heavy cream until you reach the desired texture. Spread on cooked rolls.

To Make:

Add starter and water and whisk together. Add melted butter, honey, and eggs mix together. Add flour one cup at a time and mix until combined. Form into a ball and let rise for 2 hours.

Punch down and shape into a rectangle. Use a roller pin and press into a thin ½-¼ inches width. Spread filling on dough very close to the edge so it seals. Cut into 1 in strips and roll up. Place into a greased or parchment paper pan and allow to rise for 8-12 hours on the counter. Bake at 350 degrees for 35-40 minutes or until golden. Allow to cool before topping. Place topping on top of rolls and enjoy.
