Sourdough Bread from NeeNee
There’s something so comforting about the slow rhythm of sourdough… watching simple ingredients come together, taking their time, and becoming something nourishing for the home.
I shared our full process here, with the recipe at the end if you’d like to try it in your own kitchen. It’s not rushed, not complicated… just a return to simple, faithful making.
Sourdough Bread Recipe OG from NeeNee
Ingredients:
• 50 grams of active bubbly starter
• 350 grams of warm water
• 500 grams of bread or all purpose flour
• 9 grams of salt
Whisk the starter and water together
Add flour and salt
Mix by hand to fully incorporate everything
Cover your bowl with a damp towel and let it rest for 30 minutes
After the dough has rested, work your dough into a smooth ball.
Start doing stretches and folds, grab one side of the dough and fold it over onto itself in the center. Do this on all four sides.you do this every 30 minutes, four times.
Once the stretch and folds are done, cover with a damp towel and let it rise overnight on your counter for 8-10 hours. It’s ready when it’s doubled in size.
After it’s rested, on a lightly floured surface, do one more stretch and fold.
Let it rest for 10 minutes
Once rested, form it into a ball and place it into a bowl with the seam side up.
Let it rest for an hour
Preheat your oven to 450 degrees
Put your parchment paper in your Dutch oven and place your dough inside.
Sprinkle your dough with flour and score it
Bake for 20 minutes covered and then uncover it and bake for an additional 30 minutes.
Let it cool before slicing!
